I like talking with Steve DeVries about chocolate-making. He calls me "the Enfant Terrible of the chocolate world" because of my age. Chloe calls Steve "the Einstein of Chocolate" because he challenges and improves every established technique of chocolate making.
To me, he is a hero, because he is doing things that the big corporations can't do.
